ทัวร์ฮ่องกงทำความรู้จัก Ippei-An จากทัศนวิสัยอันยาวไกลของอิสึโกะ ชิมาดะ (Itsuko Shimada) ในปี ค.ศ.1984 ที่เล็งเห็นว่าฮ่องกงสมัยนั้นยังไม่มีร้านราเม็งอร่อยๆ เธอจึงเปิดร้านราเม็งอิปเปอัง (Ippei-An) ขึ้นมา โดยใช้นะงะซะกิราเม็ง (Nagasaki Ramen) ที่มีต้นแบบมาจากจัมปง(Champon-บะหมี่น้ำชนิดหนึ่งจากเมืองนะงะซะกิ) เป็นตัวชูโรง ปัจจุบันร้านราเม็งอิปเปอัง ถือเป็นร้านราเม็งที่ติดทำเนียบความอร่อยของคนฮ่องกงไปแล้ว (คนแน่นตลอด) โดยมีฮิโงะมนซุราเม็ง (Hihomonzu Ramen) ซึ่งเป็นของขึ้นชื่อประจำร้านอีกจาน ซึ่งใช้น้ำซุปรสหวานกลมกล่อมจากกระดูกหมู คิดค้น๘นโดยสามีซึ่งเป็นเชฟฝีมือดีจากคิวชู (Kyushu) คู่กับเส้นราเม็งสดใหม่ทุกวัน (11.00-23.00น. ทุกวัน)
